Eating Mexican food doesn’t always have to be an unhealthy feast. Well, we’re not going to put it up there with the “diet food” either.

I had Taco Tuesday at my casa yesterday for the hungry teenage cousins. None of us had ever made taco’s, only had the delicious fattening ones from the Taco truck & restaurants.

Here are the ingredients to make your own at a lower calorie/fat intake!

-Corn Tortilla (You could use Wheat Tortilla instead)
-Reduced fat Mozzarella Cheese to top the taco with
-90% fat free Ground beef (you could even go up to 95% fat free)
-Chopped tomatoes, white onions, parsley, cilantro
-Reduced fat Sour-Cream, Guacamole
-Optional Sauce:: Salsa, Tapatio

Easy Steps (preparation less than 30 minutes)
1) Fry the Ground beef on High for 2 minutes, mix in Taco Seasoning

2) Add half a cup of water and turn power on medium & let it steam with pot cover on
3) Bake Taco shells or Tortilla in Oven at 250 degrees for 5 minutes or until crisp

Wa-La!! Now decorate your taco the way you like it, with half the calories!!

Even as teenagers, they’re aware of their health!! :)
